Team of Two with Honey Maid

Let's face it – Summer is coming to a close, but beach days in Miami occur pretty much every day of the week. If I could live on a private beach or island, keep my feet in the sand, and eat endless snacks with my son, my life would be complete. Therefore, I'm teaming up with Honey Maid to highlight some of my family's favorite wholesome snacks for everyday beach trips (since I clearly take trips to the beach Monday through Friday).  As a single mom, sometimes it's not always easy being a "Team of Two" but we make it happen.  From making him a wholesome breakfast, snacks and lunch, playing with race cars, chasing him around, and teaching him to swim, it's all worth it.  No matter how things change, what makes us wholesome never will.

Whenever my son and I plan a beach trip, I like to create little “bento boxes” of wholesome, nutritious snacks that we both love. I think it's fair to say that pretty much every child loves Honey Maid graham crackers, since life began. Therefore, we throw some fresh fruit, raisins, graham crackers, and cheese into bento boxes for a delicious oceanside treat.

New Video! My Weight Loss Story: How I Lost 55 Lbs in Two Months

For those of you who don't know, I lost 55 lbs once I had my baby about a year ago and I wanted to share my story with you because I've gotten a lot of requests from people regarding my weight loss regimen and tips on losing weight.  Therefore, I'm sharing my story with you  :)

Healthy Habits: Everyday Lunch Idea

Today is a special day for me, as it's my baby boy's 1st birthday!  It's amazing to see how quickly he has grown up and I love watching him continue to grow with each day.  If you follow me on Instagram then you saw the photo I posted earlier today of the birthday boy.  This weekend I'll be hosting his birthday party with a "Young Hollywood" theme.  It's fitting, isn't it?

As for today's blog post, I thought I would show you a great everyday lunch idea that is perfect for those of you who are on-the-go, in and out of the office, or even if you work from home.

Chicken Waldorf + Hummus Wrap and Vegetable Soup
It includes a whole wheat tortilla filled with hummus, cranberries, chicken, leafy greens, shredded carrots, tomatoes, walnuts and cucumbers.  The vegetable soup is made with vegetable broth, zucchini, yellow squash, onions, carrots and lentils with a hint of curry for flavor.  It's delicious!!  I also take this Beachbody vitamin/supplement with each meal.  What are some of your favorite healthy foods to eat for lunch?

Healthy Habits: Seared Tuna with Bell Pepper & Chickpea Salad

Last night, I made the most delicious dish which consisted of a seared tuna filet with bell pepper and chickpea salad on top of it.  Tuna has become one of my favorite go-to meals lately.  It's so simple to make and healthy for you too.  What are some of your favorite dishes?

Seared Tuna
Cooking spray
1 tuna steak/filet
1 garlic clove
Pepper or other seasoning to taste

Bell Pepper and Chickpea Salad
2 cups of fresh green beans
2 cups of chickpeas
1 small tomato, diced
1 small onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
Dressing: Lemon juice, Dijon mustard and a dash of olive oil

I piled the salad on top of the seared tuna; however, you can do whatever you desire!  It's the perfect summer dish.  Enjoy =]

Friday Favorites: Party/Brunch Ideas

Happy Friday everyone!  Lately, I have been brainstorming and looking up party ideas since my baby boy is going to be 1 year old in about a month.  I've already decided on an overall theme, which I will announce in a later post.  However, I wanted to share with you some of my food ideas (because everybody loves food, right?).

Mini Dessert Cups - These look so yummy and fun for a little kid's party!  How fun would it be to make (and eat) them?

Mini Spaghetti & Meatballs - I LOVE this idea and it's been decided that I'm stealing it for Taejin's birthday party.

Mini Grilled Cheese & Tomato Soup - The traditional and simple dish

Mini BLT's - Of course I would opt out of all the mayo on these and swap for turkey bacon, but these are another option.

Mini Tacos & Tequila - Si Si!  These would be for the adult guests of course.

Mini Coffee & Donuts - After living in Miami for so long, one gets comfortable with drinking coffee after meals...and what goes better with coffee than donuts?

My Typical Daily Meal Plan

Ever since I lost my baby weight, I've received many inquires about my meal plan and workout habits.  For today's post I thought I would share my typical daily meal plan.  It varies from day-to-day but this will give you an idea of how I maintain a healthy lifestyle.  I noticed a huge change in my energy levels once I began working out regularly and changing my eating habits to fit healthier guidelines.

Now I love eating healthy foods because they don't leave me feeling sluggish afterwards.  The key to maintaining a healthy lifestyle in terms of my eating habits is to eat slowly and don't over-consume, drink plenty of water throughout the day and one glass before each meal, and eat five smaller meals rather than three large meals per day.  What is your typical meal plan?

Healthy Habits: Honey-Dijon Tilapia with Capellini Pasta

One of my newest healthy dishes to make is honey-Dijon tilapia with capellini pasta.  I usually don't eat much pasta or anything too high in carbohydrates; however, I always make sure to cook with whole wheat pasta when I do.  This is a quick and healthy recipe that can be made ahead or dished up for you and your friends/family the night of!  You can also put your own spin on it by using a different type of fish or vegetables as well.  Enjoy =]

Honey-Dijon Tilapia with Capellini Pasta Recipe:
5-6 tilapia filets cut in half
1/4 cup red bell pepper
1/4 cup yellow bell pepper
1/4 cup of red onion sliced
Handful of cherry tomatoes
Handful of Italian parsley
2 Tablespoons of Dijon mustard
1 Tablespoon of honey mustard
1 Teaspoon of extra virgin olive oil
2 Tablespoons of lemon juice
Pepper and Garlic powder for seasoning
Pinch of cajun seasoning
Drizzle of hot sauce
Parmesan cheese for topping

Rinse off your tilapia filets and pat dry with a paper towel.  Place in a glass baking dish and preheat your oven to 350 degrees.

Season your fish with any seasoning of choice.  I don't use salt very often, so I opt for pepper and garlic powder with a pinch of cajun seasoning.

Toss in your vegetables and Italian parsley.  Drizzle the honey and Dijon mustard over the fish.

Add the olive oil and lemon juice to help bathe the tilapia in flavor.  Drizzle 5-6 drops of hot sauce over the mixture (optional).  Bake for about 25-30 minutes. 

Boil water and throw in your capellini pasta for about 5 minutes.

Drain the capellini, add a few filets of tilapia along with your vegetables on top of the pasta and toss with parmesan cheese.  YUM!

Healthy Habits: Quick Lunch Options

Since my schedule has been so hectic lately, I am constantly looking for quick and simple lunch options that are healthy for me as well.  Eating at restaurants day to day can not only be costly, but also unhealthy for the body.  What I like to do is cook or put together some dishes for the week so I save time and stay organized.  I don't know about any of you, but I have to keep everything organized or I will go crazy.  It helps keep my life in order, especially with being a mother to a 9-month-old baby. 

Here are some of my latest healthy lunch options:

1) Small Salads - Since I like to keep my lunches fairly light, these small salads are great for a quick bite and they are easy to throw together.  I added a handful of lettuce and arugula, diced chicken, tomatoes, red onions, green peppers, goat cheese, pecans, dried cranberries, and a vinaigrette dressing on the side

2) Wraps - These are also so easy to make and they keep well throughout the week.  I added some shredded chicken, sun-dried tomatoes, low-fat shredded cheese, red peppers, yellow peppers, and a drizzle of raspberry dressing.  I pre-package everything in advance so I can grab them quickly and I'm out the door!

3) Eggs Florentine with Turkey Bacon - This dish could apply for a quick breakfast or lunch, but I prefer eating it for lunch since it's packed with protein so it gives me a mid-day boost of energy.  I bake it ahead of time and portion it out for the week.  Enjoy the recipe!
  • 3 large eggs
  • 4 large egg whites
  • 1 cup nonfat milk
  • 2 tablespoons Dijon mustard
  • 1 teaspoon minced rosemary
  • 1/4 teaspoon freshly ground pepper
  • 5 cups chopped spinach
  • 4 cups whole-grain bread, cut into 1-inch cubes
  • About 5 strips of diced turkey bacon
  • 1/2 cup chopped roasted red peppers
  • 3/4 cup low-fat shredded Swiss cheese
Preheat oven to 375°F. Coat a large baking dish or a 2-quart dish with cooking spray. Whisk eggs, egg whites and milk in a medium bowl. Add mustard, rosemary and pepper; whisk to combine. Toss spinach, bread, turkey bacon and roasted red peppers in a large bowl. Add the egg mixture and toss well to coat. Transfer to the prepared baking dish and push down to compact. Cover with foil.  Bake 40 to 45 minutes. Uncover, sprinkle with cheese and continue baking for 15 more minutes.

Snapshot: My Weekend

Miami had gorgeous weather over the weekend, so I spent plenty of time outdoors.  There's so much going on in the city with FUNKSHION Fashion Week, Miami International Fashion Week, and Winter Music Conference coming up.  For today's post, I thought I'd share some snapshots of my weekend.  You can think of it as if you experienced all of it with me, as my road dog.

Since it was so beautiful outside, I threw on this floral romper with a striped belt and some sandals.  I love the mixing of floral and stripes.

On Saturday night, I just wanted to relax so I decided to treat myself and my little man to a spa night.  I put together a DIY facial scrub (which I will release the recipe for in a later post this week) and put some cucumbers on my eyes.  We both threw our robes on and relaxed!  It was so cute seeing him in his little robe with cucumbers on his eyes.  Surprisingly, he sat still long enough for me to snap a photo.

On Sunday, I was browsing through Anthropologie and stumbled upon these inspirational beauties.  This store is filled with feminine items, perfect for fashion or home decor.

As I was flipping through a magazine, I fell upon this quote: "Take your pleasure seriously."  It made me stop and realize that sometimes you just have to relax, even when you are in the midst of chaos and busy with work, etc.
In continuation with my previous photo, I did just that...I took my pleasure of devouring these mini cupcakes with a glass of bubbly, very seriously.  It was heavenly to say the least =]
My recent dinner menu has consisted primarily of brown rice sushi or salmon nigiri.  I am a big fan of sushi!  It's so fresh and deliciously light.

Starbucks.  Ahhh Starbucks, how I love you so.  We have a strong relationship, as Starbucks keeps luring me in from day to day.  I either grab a cup of this Bold Joe or a Grande Iced Coffee with soy and 3 packets of Equal (yes, it's that precise).

I listen to Louise Hay's "101 Power Thoughts" almost every morning to get me in the mind set for the day.  Staying positive and motivated is what drives me to accomplish even more.

I'm not sure if many of you are on Pinterest (if you are, ADD ME >>) Follow Me on Pinterest , but I have had quite the obsession with perusing this site for home decor ideas.  As I said before, I am in the process of revamping my Pinterest has been quite the bundle of joy for me.

Last but not least, I am also quite fond of Mediterranean food.  More specifically, hummus and pita bread with a traditional pide.  Hummus is basically pureed chickpeas with lemon juice and a little olive oil.  It's a great alternative to your typical high-calorie dip.  The traditional pide is a healthier version of pizza, consisting of a light and crispy flatbread with a little cheese and tomatoes on top.  I love it!

Friday Favorites: Healthy Snack Choices

Although my diet is rather healthy, that doesn't mean that I don't have the urge to snack sometimes.  What I found about working out is that I actually become hungrier the more active I am.  Instead of grabbing something filled with fat and calories, reach for a snack that is equally crunchy or sweet.  Another tip that helps curb my cravings is to eat small meals throughout the day versus eating two or three large meals.  What are some of your favorite snacks?

Here are some of my favorite healthy snack choices:

1) Hummus and Carrots | Carrots are nutrient-rich and delicious with a side of hummus.  I like this roasted red pepper hummus from Whole Foods.  Next time you're craving something crunchy, grab some of these.

2) Sauteed Spinach and Shiitake Mushrooms | When I'm craving something savory, I like to whip up this quick dish.  Simply sautee some garlic in a pan, add the mushrooms with a few handfuls of spinach and a drizzle of low-sodium soy sauce and you have a yummy dish that is good for you!

3) Raw Almonds and Dried Cranberries | This is the best of both worlds because I get something crunchy and sweet at the same time.  When I'm on-the-go, I grab a handful of these and I instantly have a boost of energy.

4) Mediterranean Crunch Salad | This is light and packed with crunchy vegetables that are good for you - garbanzo beans, fennel, cucumber, parsley, kalamata olives (very few), onions, red pepper, kale, cherry tomatoes, mint, lemon juice and apple cider vinegar.  It's perfect for a late afternoon snack.

Friday Favorites!

It's Friday, so you know what that means...Friday Favorites!  For this week, I've featured primarily beauty products but a few other items relating to fashion or health.  I was not compensated to promote these brands by any means.  Enjoy your weekend, guys!

This cleanser is one of my go-to face washes because it doesn't leave my skin dry at all.  I received this at a fashion show; however, it is most likely available at any of your local drug stores.
I'm a fan of Clean & Clear products (ever since my tween-age years), and this Morning Burst facial scrub is perfect for deep cleansing.  I use this about once a week.  I picked this up at CVS, but I'm sure it's available at Target or Walgreen's as well.
Urban Decay has my favorite eyeshadow primer, which some would consider an "indulgence" since it isn't really necessary when applying eyeshadow.  However, I find that it actually helps reduce the need to use more product because it acts as a glue to keeping your eye makeup on longer.  I grabbed this item at Sephora.
Lately, I have been using this bareVitamins PRIME TIME foundation primer as well.  At first I thought that the oily consistency would leave my face feeling greasy but it actually applies smoothly without any residue.  This primer helps keep foundation on throughout the whole day.  I purchase this product from Sephora as well.
I have to admit, I am a sucker for protein or nutritional bars and I love these Pure & Simple energy bars by PowerBar.  They satisfy my hunger and taste delicious too!  I buy these from Walgreen's.
Last but not least, this was one of my major splurges this week.  I owned an iPhone before and switched back to Blackberry for some time but now I've returned to the infamous iPhone and I'm loving my new toy!

Friday Favorites

Happy Friday, lovers!  For today's post I decided to showcase some of my favorite health, beauty, home or fashionable items for the week.  These are items that I recently purchased and have been using often or I highly recommend to you.

Since it's been a little chilly lately, I have been wearing a lot of hats and scarfs and my latest hat fetish includes fedoras.  

Those who know me must know that I absolutely love candles, and I probably go through them in two weeks.  Anyway, this peppermint cranberry candle smells so good (available at Target).

I've been using this ELF eyeshadow palette this past week, and it's great because it has 100 shades in almost every color option.  I also found this beauty at Target for only $10.  They had other palettes for $5 as well.

This clutch was actually gifted, but I love the detailing and color of it.  It's classic with the gold clasp and chain.  What's also great about it is that the chain can be worn with it as a shoulder bag or removed as a clutch.

Since having a baby, I've been very conscience about my diet and work out regimen.  I have been getting a lot of questions regarding what I eat, how I lost my baby weight, and what my work out plan consists of.  I'll post more at a later date, but for now I want to highlight these LUNA nutrition bars.  I LOVE these bars.  They are ideal for women because the calorie content isn't really high, but you still get a high enough amount of protein in each bar.

Essie is one of my favorite nail polish brands.  Lately, I have been switching out these three tones: 1) Buy me a Cameo 2) Clambake and 3) Sand Tropez.  You can purchase Essie at almost any drugstore or generic store.

Last but not least, these Steve Madden booties are definitely one of my favorites.  The first time I spotted them was while window shopping on Lincoln Road and I knew that I had to have them.  I actually wore these babies for New Year's Eve.  They are extremely comfortable too.
