One of my newest healthy dishes to make is honey-Dijon tilapia with capellini pasta.  I usually don’t eat much pasta or anything too high in carbohydrates; however, I always make sure to cook with whole wheat pasta when I do.  This is a quick and healthy recipe that can be made ahead or dished up for you and your friends/family the night of!  You can also put your own spin on it by using a different type of fish or vegetables as well.  Enjoy =]

Honey-Dijon Tilapia with Capellini Pasta Recipe:
5-6 tilapia filets cut in half
1/4 cup red bell pepper
1/4 cup yellow bell pepper
1/4 cup of red onion sliced
Handful of cherry tomatoes
Handful of Italian parsley
2 Tablespoons of Dijon mustard
1 Tablespoon of honey mustard
1 Teaspoon of extra virgin olive oil
2 Tablespoons of lemon juice
Pepper and Garlic powder for seasoning
Pinch of cajun seasoning
Drizzle of hot sauce
Parmesan cheese for topping

Rinse off your tilapia filets and pat dry with a paper towel.  Place in a glass baking dish and preheat your oven to 350 degrees.

Season your fish with any seasoning of choice.  I don’t use salt very often, so I opt for pepper and garlic powder with a pinch of cajun seasoning.

Toss in your vegetables and Italian parsley.  Drizzle the honey and Dijon mustard over the fish.

Add the olive oil and lemon juice to help bathe the tilapia in flavor.  Drizzle 5-6 drops of hot sauce over the mixture (optional).  Bake for about 25-30 minutes. 

Boil water and throw in your capellini pasta for about 5 minutes.

Drain the capellini, add a few filets of tilapia along with your vegetables on top of the pasta and toss with parmesan cheese.  YUM!
